Pork tenderloin is invariably tender and tasty, this recipe is so simple yet everyone will think it is gourmet, it looks scrumptious on the platter sliced into medallions. You mix this seasoning rub yourself so you can add or take away at will.
Pork Tenderloin with Seasoned Rub

1 teaspoon ground coriander
1 tsp ground cumin
1 tsp garlic powder
1 tsp dried oregano
1 tsp dried thyme
1 tsp Salt
1 1/4 pounds pork tenderloin ( these often come two loins per package one serves two or three, cook both pieces for six or seven servings)
1 tablespoon olive oil
1 teaspoon minced garlic
Preheat the oven to 450 degrees F.
In small bowl mix dry ingredients. Stir mixture until all the ingredients are well combined. This will be used as a rub to make the pork well seasoned all over. Sprinkle the rub over the tenderloin, then rub the pork with the seasoning over all sides of the meat, pressing gently so the seasoning sticks well to the tenderloin.
In a large skillet over medium-high heat, add the olive oil and heat. Add the minced garlic and saute, stirring, for 1 minute. Put tenderloin in the pan and cook for about 10 minutes, searing each side using tongs to turn the meat. Transfer meat to a roasting pan and bake for 20 minutes per pound or until instant read thermometer reads 160F . Slice and serve.
