Wayland’s Breakfast or Brunch Bake

This recipe allows you to time your meal a little better than the typical bacon and eggs breakfast. If you are serving company they will like the little surprise.

Cheesy Bacon & Egg Breakfast or
Brunch Bake

Total Time 55 min.
Servings 8 servings


8 eggs
1/4 cup milk
12 slices cooked Smoked Uncured Bacon, coarsely chopped
1 cup Shredded Sharp Cheddar Cheese
(optional 1/2 cup chopped seeded tomatoes Since plum tomatoes have fewer seeds and a firmer texture than
regular tomatoes, they work especially well in baked recipes, such as this tasty egg dish.)
6 green onions, sliced
1/4 tsp. pepper
Pre-Heat oven to 350ºF.
Whisk eggs and milk in medium bowl until blended. Stir in remaining ingredients.
Pour into 9-inch pie plate sprayed with cooking spray.
Bake 35 to 40 min. or until center is set and top is puffed and golden brown.

Bacon can be cooked ahead of time. Store in airtight container up to 24 hours before using as directed.
