“The meatloaf for those folks who are not generally fans of meatloaf. The glaze developed by brown sugar and ketchup makes for a very special meatloaf.

Servings: 6 to 8
1 ½ to 2 pounds 90% or better lean ground beef
The meatloaf will be sitting in whatever fat cooks out so the less “juice” the better when you turn it out onto your platter.
3/4 cup milk mixed with 2 eggs
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1 small onion about a cup chopped
1 cup finely crushed saltine cracker crumbs
1/2 cup packed brown sugar
1/2 cup ketchup
- Preheat oven to 350 degrees F (175 degrees C). spray a 5×9 inch loaf pan with Pam™ or another similar product.
- Press the brown sugar in the bottom of the sprayed loaf pan, then spread the ketchup over the sugar.
- In a mixing bowl, mix thoroughly (I use my Kitchenaid stand mixer) all remaining ingredients, starting with the egg and milk mixture then the crushed crackers and salt and pepper. Mix just until blended and shape into a loaf. Place on top of the ketchup.
- Bake in preheated oven for 1 hour or until juices are clear.
The leftovers, if you have any, make great sandwiches!
